L’acte de manger se décline beaucoup plus largement qu’à travers la satisfaction d’un besoin biologique. Il se trouve au carrefour de l’affectif, du culturel et du social. Selon les personnes, les aliments sont porteurs de différents rôles : rôle nourricier de maintien de vie, mais aussi de marque d’affection, rôle hygiéniste de maintien de la forme et de la santé, rôle hédoniste (goûts et préférences alimentaires, plaisir de manger), rôle social et d’identification. Chaque personne se construit sa propre histoire alimentaire qui résulte de l’interaction de différents facteurs biologiques et culturels.
